How to cook quinoa for salad

It's very simple: for half a cup of groats we take 1 cup of water. Pour quinoa into a small pot, pour water, bring water to a boil, turn down the heat and cook for 15 minutes. All the water should boil away, just like when boiling buckwheat.

When the quinoa is boiled, let it cool.

Step 2

While the quinoa is cooling, prepare all the ingredients for our salad.

Finely chop the red onion, wash the salad leaves and dry them with paper towels. Peel and cut the orange into slices, remove the white skin from the slices so that only the pulp remains.

Dice the avocado any way you know how. My favorite way: cut the fruit in half, take out the pit, then cut the pulp lengthwise and crosswise (as if making a grid for a game of crosses and zeroes), and then with a spoon separate the pulp from the skin. And the avocado cubes are ready.

When the quinoa has cooled, we can assemble the salad. In a large bowl, arrange the salad leaves, red onion, sweet corn, quinoa, orange slices and avocado cubes.

Salad dressing

Actually for this salad it can be any kind of dressing.

Option #1. Prepare the dressing, the ingredients for which are listed above. Mix orange juice, honey and balsamic vinegar.

Option #2. You can dress the salad with orange juice or a mixture of balsamic vinegar and olive oil.

Option #3. Thick dressing made from one avocado, orange juice (approximately 3 tablespoons), juice of 1 lime and 2-3 tablespoons of olive oil.

Drizzle the salad with the dressing, stir and it's done! We can serve!
