Gingered Squash & Sweet Potato Soup

Ingredients:

  • Ginger Creme Fraiche:
  • 1/2 cup creme fraiche
  • 1 teaspoon freshly grated ginger
  • Soup:
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon minced garlic
  • 1 1/2 cups diced onion (from about 3/4 large onion)
  • 1/2 teaspoon cumin
  • 1/8 teaspoon cayenne pepper
  • — Pinch cinnamon
  • — Kosher salt and ground black pepper, to taste
  • 2 teaspoons freshly grated ginger
  • 2 pounds butternut or other winter squash (about 4 cups)
  • 1 pound sweet potato, peeled and diced (about 2 cups)
  • 3 1/2 cups chicken broth (or substitute vegetable broth for a vegetarian soup)
