Onion Soup Standing Rib Roast

A rib roast is a classic Christmas dinner (and beyond) centerpiece, and part of its beauty is in its simplicity. That being said, in this recipe, one ingredient takes this classic recipe to a whole new level: onion soup mix. You can use any brand you like, but Lipton Recipe Secrets is a go-to choice for me. All you need to do is cover every side of your rib roast with the seasoning mix, sear and cook as directed, and in a couple of hours you’ll have the most flavorful holiday main. Trust me—this might just become your new holiday staple. 

If your rib roast is slightly bigger, or if you prefer yours at a different level of doneness, refer to this guide: Rib roasts usually cook at about 15 minutes per pound for rare, and 17 minutes per pound for medium. My top tip? Always use a meat thermometer so you know exactly when your roast reaches your desired level of doneness.

    (1-oz.) packet onion soup mix, such as Lipton Recipe Secrets

    1. Step 1Preheat oven to 450°. Let beef come to room temperature as oven preheats. Season beef with onion soup mix, making sure to cover all exposed sides, and place in a roasting pan, fattiest-side up.
    2. Step 2Roast 15 minutes to sear the outside, then reduce oven temperature to 350° and cook until meat is medium-rare and internal temperature reads 120° when taken with a meat thermometer, about 2 hours (15 minutes per pound).
    3. Step 3Drape meat with foil and let rest 10 minutes before slicing.
